CHEWY PEANUT BUTTER COOKIES
made these the other night for a potluck, and i may have finally found a peanut butter cookie recipe i love. the consistency never seems right, but these were absolutely delish and as chewy as i hoped for!
i usually stray from recipes that include shortening, and in this case i increased a bit of the unsalted butter than the recipe and lessened the amount of shortening called for. make sure you set all the ingredients out and let them soften to room temperature before attempting to mix any of the ingredients. you also need to use a stand mixer or get those guns ready if you’re using a manual hand mixer!
mix in butter, peanut butter, and sugar in a bowl and set aside.
then beat in egg, vanilla, and milk slowly into the bowl.
lastly beat in flour, baking soda, baking powder, and salt. then roll the dough into small 1inch balls in granulated sugar before pressing them flat with a fork on an un-greased cookie sheet.
make sure your oven is preheated to 425F and i didn’t let my cookies cook longer than 10 minutes to keep them chewy. you can almost undercook these!
i pressed in a few chocolate chips to about half of the cookies before dropping the rolled balls of dough onto the cookie sheet. to try and make them extra special, consider adding in peanut butter chips!
- 1/2 cup butter, softened
- 1 cup peanut butter
- 3/4 cup white sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 1 1/4 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

a recent treat: SALTED BUTTER RICE KRISPY TREATS.
they were a complete hit at a book club party i hosted at my apartment. why are they so delish? they’re a more adult-tasting spin on a classic childhood recipe that we all loved. the browned butter gives it such a mature, savory, (instead of sweet) taste.
WHAT YOU NEED:
- 1 stick of unsalted butter, plus a little extra for the pan
- 1 10-ounce bag marshmallows (i prefer the smaller ones, they melt faster)
- Heaping 1/4 teaspoon coarse sea salt (essential!)
- 6 cups Rice Krispies cereal (about half a 12-ounce box, generic works)
WHAT TO DO:
- Coat an 8-inch square pan with lots of butter or non-stick cooking spray. I also line mine with parchment paper to make the treats even easier to remove from the pan.
- Melt butter over medium-low heat in large pot
- STIR OFTEN! Try using a spoon that can withstand really high temperatures. The butter will melt, then foam, then turn clearish, and finally start to turn brown and smell nutty. Don’t look away from the pot because it turns brown within a really short period of time.
- As soon as it does, turn the heat off and stir in the marshmallows. If they don’t melt, you can turn on the heat super low to get them to stir in completely.
- Remove pot from stove and stir in the salt and cereal together.
- Quickly spread mixture into your prepared pan and cut when hardened and cool. I usually stick mine into the refrigerator for about 20 minutes and easily cut the treats into squares. Store in covered dish.
